Pinch of Cumin

Easy blueberry & blackberry pie

Here I come with another home-made invention, based in my mother’s apple pie recipe, and caused by the big amount of blackberries that I have at home and with which I do not know what to do (yeeeees, I know, eating them, but the issue is how :P) And the thing is that when one is going out to the countryside for a walk with the dog and sees that many blackberries, it is unavoidable to resist to that amazing crop.

Other of the destinies that I give to blackberries is jam, with which I could have “painted” this pie, but I have been unwilling to do so, because it would have been too purple and it was better with a bit of icing sugar. I reserve jam for cheesecake, it goes incredibly well with it, and of course for autumn-winter Saturdays and Sundays’s toasts. As I promised a few posts ago, I will talk about blackberries jam in another post, I have not forgotten it, but recently I am running out of free time :?.

Ingredients for 1 pie (6-8 people)

300 gr of blackberries

250 gr of blueberries

1 glass of white sugar

1 glass of all-purpose flour

1 glass of milk

4 tablespoons of almond powder

2 eggs

2 teaspoons of baking powder

Vanilla essence

1 pinch of salt

Grease a baking mold with butter or vegetable oil and spread on top a bit of flour (you can use the detachable circular one or any other, like in this case, I have used the same I use for quiches and cakes).

Clean and wash blackberries and put them on the mold, in a way that they cover the whole base.

Mix all ingredients with a mixer and pour this batter on top of the blackberries.

Next, clean blueberries and put them on top of the batter.

Bake it in preheated oven for 45-60 mins. (I normally preheat oven to 200C for 5-10 minutes and after that I bake it for 25 minutes to 200C so that it grows, and the rest of the time to 180C so that it is well baked inside).

After baking it, let it retrieve room temperature and when it is cool, sprinkle it with icing sugar.

To be considered

The amount of blackberries and blueberries is for guidance. I normally do it with those quantities, but if you have a bit more or a bit less, it is also great.

Muy buena de sabor, pero se me quema por fuera y no se termina de hacer por dentro, ¿a qué temperatura has puesto el horno?

Cris, tienes razón, no he puesto la temperatura! Ahora lo modifico :). Yo suelo precalentar el horno a 200C y luego la mitad del tiempo a 200C y la otra mitad a 180C para que se haga bien por dentro sin quemarse. besos!
