Cheesecake with homemade blackberry jam

Cheesecake is one of the most popular cakes in the world, wherever you go, you will find one. Normally it has secure success not only because of its texture, but also due to the combination of cheese with cookies and jam. On the internet you can find many recipes: with or without jelly, with caramel custard powder, with more or less eggs, with mascarpone cheese…. or even with white chocolate. I have tried several of them, and I have made my own version, which is simple and with a bit more laborious than some others, but the result is work it.

Taking advantage that this weekend I have dinner at a friend’s place and that today I have had some spare time, I have gathered all ingredients and in a while I am going to start cooking it. That will be my contribution with the dessert.

I have had the jam made since last blackberries season (summer), and it has lasted for breakfast and tea times for the whole fall and winter. I will explain in another post how to do it, but if it is not homemade, you can also use the ones you buy, not only made of blackberries, but it is also great with raspberry, strawberry or any other fruit of the forest.

Ingredientes for the base:

220 gr of Maria or Digestive cookies (I normally use Digestive, I like better their taste)
100 gr of melted butter

For the filling:

2 packs of cream cheese Philadelphia style
150 gr. of white sugar (a bit less than one glass)
3 egg yolks
3 egg whites whisked until stiff
125 ml of liquid cream
1.5 tablespoons of all-purpose flour
vanilla or grated lemon rind


Grind cookies until dust by hand or by food processor (with food processor the task is faster and easier) and mix them with melted butter until you have a smooth batter.

Butter a mould with separate base of around 22 cm diameter and at least 5cm height. Put the batter on it and press it until you have a horizontal homogeneous layer.

Whisk the yolks in a bowl, add the sugar and keep whisking for a while until you have a smooth, kind of white, batter.

Add cheese and cream. Mix it until cheese is broken up. Add lemon rind or vanilla and finally, whites whisked until stiff. Stir it carefully and spoon it on top of cookies/butter batter

Preheat oven to 200ºC for 5-10 min and bake the cake for 45 minutes (first 15 minutes to 200ºC and 15 last minutes to 180ºC). Before taking it out, make sure that it is baked by introducing a knife.

Let it retrieve room temperature and take it out from mould.

You can serve it together with raspberry/strawberry/fruits of the forest jam, or as in this case, with homemade blackberry jam, delicious!

To be considered

I like it better when it has settled for a whole day, but it tastes delicious anyways. It is quite big and yield 10 people with nice portion each one.

    Ya he hecho la tarta y está muy buena. Haré otra para mi cumple y asi endulzaré a mis amigas. A ver si lo mismo que en arquitectura haces altas torres de verdad, te animas y (ahí que hay tanto chocolate), haces una de chocolate. Porque esa sí nos podrías enseñar a hacerla. Las que haces en Paris etc. ya sería más complicado jijiji

    Lo hice ayer y cambie la mermelada de mora por ciruela, para que mi niña de 10 meses tambien pudiera tomar, ¡salio buenisimo! la pequeña tomo un trozo y la mayor dos, y todavía queda tarta para cenar hoy
