Maple syrup salmon

Easy, healthy and absolutely delicious. This is what you will probably say after cooking and eating this easy and tasty dish coming directly from Canada, where maple syrup is the main ingredient of many of their star recipes.

Some of  you may be wondering… but what’s maple syrup? So that you get it quickly, it is the “caramel” that you use for American pancakes, for example. If we want to be a bit more technical, we would say that it is a natural sweetener based on maple sap. The two types of mostly used maples to produce it are sugar maple and black maple, both of them existing in Canadian maple forests, where Indians already knew this art of extracting their sap to prepare this syrup.

Its production is concentrated in February and March and it basically consists in making incisions into their wood and extract sap in bowls. After that it is boiled, filtered and purified to get rid of any damaging substance. So that you have an idea of quantities, out of 40 l of sap it is obtained 1 l of maple syrup.

As you can imagine, it is used the same way as sugar; to sweeten coffees, bakery, eggs, etc. It contains less calories than honey and more minerals and essential aminoacids (calcium, iron, potasium, zinc, folic acid, etc).

Ah, and nowadays it is not difficult to find, very important!


Ingredients for 2 people

2 pieces of salmon
60 ml of maple syrup
2 tablespoons of soy sauce
1 teaspoon of grinded ginger
Parsley or spring onion to decorate (optional)



Mix maple syrup, soy sauce and grinded ginger and stir it until you have an homogeneous mixture.

Let the salmon marinate with this mixture in a glass or plastic bowl (never metallic) for about 30 minutes.

Place the salmon in a oven bowl together with the marinade and grill it for about 10 minutes only so that it remains cooked and juicy. While it is being cooked, with the help of a spoon, pour sauce on top of salmon several times.

Serve it in a plate with the sauce on top.


To be considered

If you do not have oven you can also cook it in a skillet to high heat for 2 minutes each side, and later you can heat marinade and pour it on top right before serving it.
