Roasted chicken with rosemary and lemon sauce

Have I ever told you that chicken is one of my favourite dishes? It offers as many possibilities that it is impossible to get tired of it. From the already traditional fried chicken (that I do not cook that much since I end up with the kitchen decorated with oil) to the broad variety of ingredients with which to combine roasted -as in this case rosemary and lemon-, stopping by chicken soups and other recipes those with a discerning palate will enjoy.

Besides, chicken belongs to poultry meat group, with a very high content of proteins and vitamin B3 and low content of fat (most of it in its greasy skin). It is an ingredient specially indicated for the muscular development, so its consumption is ideal during childhood, adolescence and pregnancy.

If you add that it is one of the most affordable meats of the market, not only by its price, but also because you can find it anywhere, then you do not have any excuse to join the chicken-addicted club!

Ingredients for 2 people

2 quarters chicken

1/2 lemon

2 garlic cloves

30 ml of olive oil (I have used extra-virgin)

1 teaspoon of all-purpose flour

1 teaspoon of white sugar

1/2 teaspoon of rosemary

1/2 teaspoon of dried oregano

Salt and pepper

Directions

Chop garlic into little cubes, or better, crush it in the mortar.

Squeeze the half lemon and mix it with oil, sugar, spices and chopped garlic.

Place the chicken in a plastic or glass bowl (avoid metallic ones) and pour this mixture on top of it. Let it cool in the fridge while it gets marinated for a whole night.

Next morning, get rid of the excess of marinate and reserve it.

Preheat oven for about 5 minutes to 180ºC and cook chicken until brown, around 35 minutes, giving it a turn after the first 17-20 minutes. Chicken is ready, the sauce is left.

Mix the liquid generated when cooking the chicken with the marinate that you have reserved, and simmer it to low heat until it thickens.

Pour the sauce on top of the chicken right before serving.

To be considered

It has an awesome flavor, and the most important thing, chicken is quite juicy and has a very interesting gelatinous sauce.
