Grape and walnut rice

Let’s go with the death throes of summer-autumn… and with this recipe I say goodbye before entering in a hibernation mode, since weather forecast announces snowfall this weekend, and it’s time to start thinking about other type of dishes, a bit more caloric and powerful so that everyone gets warm.

But as I was explaining, before I get frozen and walk in the street like an onion trying not to slip at the first chance, today I publish this extremely easy, fast, balanced and very very light recipe; you will only have to boil rice and enjoy a mix of textures and flavors that will really surprise you.

Ingredients for 2 people

100 gr of rice (I have used basmati, but it is also good with round grain rice)

100 gr of black grapes

100 gr of white grapes

1 orange

1 handful of walnuts

Fresh spring onion, salt and pepper


Clean grapes, slice them in halves and reserve them in a bowl. Next, squeeze the orange and pour its juice in the bowl with the grapes. Chop spring onion on top of grapes also and season with salt and pepper.

Wash rice several times until water comes out transparent and cook it the way you normally do (I use a rice cooker). After cooking, I do not strain it due to the system of the rice cooker, but if you do not want to do it with the little machine, wash it again once it is cooked, and let it strain for some minutes.

Add rice to the mixture of grapes, orange juice and fresh spring onion and stir it well.

Finally, chop walnuts and add them while you stir it.

To be considered

You can eat it hot as a starter or side dish, and cold as a summer rice salad, very useful for camping days (I like it both ways, I eat it hot in autumn and cold in summer).
