Radish salad with yogurt dressing
This is one of my favourite dishes due of its simplicity, its freshness and its inimitable taste. Before living in Switzerland I did not eat that much of radish; In Spain they are not as common as they are here, so I am not exactly an expert in these funny vegetables, that I have just got to know.
The issue is that, as they are all around in supermarkets, I use to buy them for salads, or as side dish with meat and fish. In this salad I just wanted to give them full prominence, in a way that with only a few ingredients and not that much time (only the time you need to slice radishes taking care that they do not touch your kitchen ceiling in the attempt) you have a very healthy and tasteful starter.
I was about to forget, but at this point I guess you have already suspected it… ideal for hot days like today!
Ingredients for 2 people
15 radishes
3 tablespoons of plain yogurt
1 tablespoon of olive oil (I have used extra-virgin)
1 tablespoon of raisins
½ tablespoon of sugar
1 teaspoon of dill
½ lemon
Salt and pepper
Directions
Clean and slice radishes into very thin slices. Let them get completely dry.
Squeeze half lemon and mix it with yogurt, oil, sugar and dill. Stir it until smooth.
Add raisins and season with salt and pepper.
Place radishes in a bowl and sprinkle them with yogurt dressing with raisins.
Sprinkle a bit more of dill on top to decorate.
To be considered
You can also use this dressing for potato salads, or also you can add potato pieces to this salad.
Perfect as a side dish for meat or fish, especially in summer time.
