Turkey breast with cinnamon candied apple
This is what happens to me when I see random things in the fridge that need to be used somehow. I end up making my own creations, in this case quite tasty and extremely simple. The thing is, I had turkey fillets and apples lying around, waiting for creative inspiration to strike. The turkey wasn’t much of a problem because it was frozen and could sit there patiently, but the apples were starting to wrinkle, which is a clear sign that it was time to put my brain to work and come up with a good plan.
I have to admit that it’s the first time I’ve made turkey this way, and as has become my tradition, whenever I make something worthwhile, I turn on the computer and write down what I’ve done in my online logbook so I can repeat it from anywhere in the world whenever I feel like having something so tasty.
And of course… so that you can try it too 😉 .

Ingredients for 2 people
2 large turkey breast fillets (or 4 small ones)
2 medium Golden apples
2 teaspoons poppy seeds
1 cinnamon stick
1 teaspoon white sugar
1 teaspoon paprika
olive oil for frying
caramelized onion for garnish (optional)
salt

Preparation
Peel the apples and cut them into cubes. Bring water to a boil in a saucepan, and when it starts boiling, add the apples along with the cinnamon stick and the teaspoon of sugar, and let it cook for about 15 minutes.
Rub the turkey fillets with paprika and poppy seeds and cook them on a griddle for about 2 minutes on each side.
Serve it with the candied apples and some chopped parsley or chives.

Things to keep in mind
You can substitute the candied apples with roasted potatoes or salad.
It also works wonderfully with chicken breast instead of turkey.
