Turkey breast with lime and sweet corn
Although according to my last published recipes it seems that at home we only eat muffins and rice, I also cook special main dishes from time to time -or to be more precise, atypical ones-. A good example is this turkey breast, which has ended up as being very soft and juicy, and I am very proud of it.
The idea was to add it a special value, since I was a bit bored of mostly always eating “simply” fried or grilled steaks. It is true that when you do not have enough time it is the best solution, but my palate really appreciates a “pearl” out of the standard way every now and then. Also yours?
Ingredients for 2 people
2 turkey steaks
2 limes
2 tomatoes
3 scallions
Sweet corn to use it as side dish
2 tablespoons of extra-virgin olive oil
½ teaspoon of grinded ginger
Salt and pepper
Directions
Squeeze one of the two limes, grate the zest of half of it and reserve it separately.
Slice the scallions in very thin slices.
Mix oil, lime juice, ginger, sliced scallion, salt and pepper.
Put turkey steaks with previous mixture in a glass or plastic bowl (not metallic) and store it in the fridge for a whole night.
Next morning, remove the excess of macerate except for the scallion, and fry it lightly in a skillet with a few drops of oil.
Serve it together with a tomato with salt and oregano, sweet corn and lime quarters.
Finally, scatter lime zest on top of the steak and corn.
To be considered
You can do it the same way replacing lime for lemon or grapefruit to experience other variations.
