Grapefruit and lime muffins
I am sorry, I cannot help it. This week again I could not resist the temptation of baking muffins.
Today’s recipe is an adaptation, I think the experience of baking that many of different flavors allows me to directly invent them taking advantage of the ingredients I have around at home. As a rule, nothing has to be thrown away, but in crisis times, such as current one, it could be considered a sacrilege. So I have decided to put in good use the lime and grapefruit that I had, and here is the result, tasty as mostly always.

Ingredients for 12 units
130 gr of all-purpose flour
120 gr of whole-grain flour
1 tablespoon of vegetal oil
1 teaspoon of baking powder
1/2 teaspoon of baking soda
½ teaspoon of cinnamon
1/2 teaspoon of grinded ginger
1/2 teaspoong of nutmeg
60 gr of chopped hazelnuts
1 egg
1 grapefruit
1 lime
140 gr of brown sugar
100 gr of yogurt
Directions
Make a juice with grapefruit and lime and reserve it.
In a bowl, mix flours, baking soda, baking powder, hazelnuts and spices and reserve it.
In another bowl, whisk eggs and add brown sugar, vegetable oil and yogurt. Add lime and grapefruit juices to this mixture.
Pour the mixture of the second bowl in the first one, and stir it until you have a smooth batter.
Pour the batter in the muffin cups, previously placed in a more rigid mold so that they keep their shape (I normally use a silicon mold or the crème caramel ones). Fill the cups only to 2/3, so that they have space to grow later.
Preheat oven to 200ºC for 5-10 min. Bake muffins to medium temperature for about 30 minutes, depending on the size of the muffins.
Once baked, let them settle for about 5 minutes in the tins so that they do not break. Take them out and let them retrieve room temperature.
To be considered
You can freeze them and take them out from the freezer some minutes before eating them. Heat them in the oven for a few minutes or in the microwave for 30 seconds.
Do not panic if the batter is too thick. It has to be this way so that it grows up well. In case you cannot stir it, you can add a trickle of milk so that you can do it.
