Thai pinneaple fried rice
What better for a hot day like today than a cool and fresh rice salad, with all nutrients that you need, in a unique dish. In this case, I use it as a “all in one” dish, since apart from the carbohydrates of rice, it combines protein of egg, fiber, minerals and unsaturated fat of nuts, taste, proteins and vitamins of seafood and the part of pineapple, antioxidants, carbohydrates and vitamins.
And if besides that it is as tasty as it is, why do we want more?
Ingredients for 2 people
120 gr of basmati or jasmin rice (I have used basmati)
3 slices of fresh pineapple
1 glass of peeled shrimp (also works with frozen ones)
1 egg
1 clove of garlic
1 handful of raisins
1 tablespoon of scallion
Olive oil to fry (I have used as normally extra-virgin)
Directions
Peel pineapple, remove its core and chop it into medium-sized cubes. Put them into a bowl together with raisins and reserve it.
Wash rice several times with water until water comes transparent and boil it the way you normally do (I use a rice cooker). After it is cooked, if you are not doing it with rice cooker, then wash it again and let it get dry.
Slice garlic in thin slices and sauté it in a saucepan with hot oil.
Add egg without whisking it, directly to the saucepan, and stir it the same way as if you were cooking a sautée.
Add shrimps, and when they are cooked, pineapple and raisins.
Finally add scallion and sauté for a few minutes.
To be considered
You can eat it warm as a side dish or cold as a summer salad, very useful for picnic days (I like it both ways, normally eat it warm in winter and cold in summer).
If you have any piece of cooked ham, chop it into cubes and add it to the recipe, it combines perfectly with pineapple.
