Salmon with maple syrup

Simple, healthy, and absolutely delicious. That’s what you’ll probably say after making and tasting this flavorful dish that comes directly from Canada, where maple syrup is a key ingredient in many of its signature recipes.

Some of you may be wondering… what exactly is maple syrup? To put it simply, it’s the “caramel” you pour over pancakes with whipped cream, for example. If we want to be a bit more technical, we can say that it is a natural sweetener made from maple sap. The two most commonly used types of maple trees for extracting sap are sugar maple and black maple, both found in Canada’s maple forests, where Indigenous peoples already knew the art of extracting sap and preparing this syrup.

Its production is concentrated in the months of February and March and basically consists of making incisions in the wood and collecting the sap in containers. It is then boiled, filtered, and purified to remove any substances that could be harmful. To give you an idea of the quantities, about 40 liters of sap are needed to produce 1 liter of maple syrup.

As you can imagine, it is used in the same way as sugar, to sweeten coffee, pastries, eggs, etc. It has fewer calories than honey and more minerals and essential amino acids (calcium, iron, potassium, zinc, folic acid, etc.).

Oh, and nowadays it’s not hard to find at all—very important!

Ingredients for 2 people

2 salmon fillets
60 ml maple syrup
2 tablespoons soy sauce
1 teaspoon ground ginger
parsley or chives for garnish (optional)

Preparation

Mix the maple syrup, soy sauce, and ginger and stir well until combined.

Let the salmon marinate in this mixture in a glass or plastic container (never metal) for about 30 minutes.

Place it in an oven dish along with the marinade and cook it under the grill setting for about 10 minutes so it cooks through and remains juicy. While it is cooking, use a spoon to pour the sauce over the fillets several times.

Serve it on a plate with the sauce poured over the top. bqout

Things to keep in mind

If you don’t have an oven, you can also cook it in a pan over high heat for 2 minutes on each side, then heat the marinade and pour it over just before serving.
