Do you want to eat something really delicious that at first glance you would never have thought tasted this good? Here is the solution. Its appearance is not exactly the best, since it is still a pâté and visually it is not particularly attractive. If you are a bit reluctant to try new things, you probably won’t want to taste it and might even make a face when you see it… but is it really that good? Are you sure?
The curious thing is that once you try it, you won’t be able to stop; its flavor is addictive and if you eat it with pita bread it will become a kind of staple for appetizers and starters that you’ll want on your table for any celebration.
Give it a chance… and try it for yourself!

Ingredients for 4 people
2 eggplants
1 tablespoon of olive oil (I used extra virgin)
1 tablespoon of tahini (sesame paste)
1 clove of garlic
1.5 tablespoons of lemon juice
salt, pepper, and paprika

Preparation
Cut the eggplants in half lengthwise and roast them in the oven, skin side up, for about 40 minutes until they are tender.
Let them cool completely and once they are at room temperature, remove the skin and cut them into cubes.
Mix the eggplant cubes with the rest of the ingredients and blend in a food processor until you get a smooth paste.
Before serving, drizzle with a little olive oil and sprinkle paprika on top. Serve with pita bread.

Things to keep in mind
If you can’t find tahini, you can grind a tablespoon of sesame seeds yourself or add them to the mixture before processing.
If you don’t have pita bread, any other type will work; it’s also delicious with crispbread like in the photo ;).
