Today we are going to celebrate three things with this cake: that it is Sunday, that we gain 1 hour with the winter time change, and that it is the birthday of a great friend and battle-mate Estefanía (have a look at her blog, it is amazing and very interesting:  http://bauldeunaarquitecta.blogspot.com/). You will prepare it very quickly and you will end up being considered at the same level as big chefs, it results expecially spongy and delicious.

One of the things that I like best from this cake is its “gruyère cheese” appearance and texture (even considering that this cheese has no holes, it’s only an urban legend, but I will explain this in another post, by the moment let’s continue thinking that it has little bubble holes 😆 ), with those bubbles that have set while they were going up, leaving air grooves that  make each bite even more attractive.

And without further delay… let’s go with the ingredientes and the “step by step” to enjoy this incomparable flavor.

Ingredients for 1 cake (approx. 8 people)

1 glass of sugar

1 glass of all-purpose flour

1 glass of milk

4 eggs

10 gr of baking powder

1 pinch of salt

1kg of apples (ideal if Golden or Gray Pearmain)

Directions

Peel and slice apples into very thin slices and reserve them. So that they do not oxidize while you prepare the rest of ingredients, you can sprinkle them with a trickle of lemon juice.

Whisk all ingredients except for apples in a mixer.

Place apple slices in a baking tin and once you are done, pour the batter on top of them.

Preheat oven to 200ºC for 5-10 minutes and bake the cake for 45 minutes or 1 hour.

After baking it, let it rest for about 20 minutes before taking out from the baking tin and when it is cold, spread peach or apricot jam on top.

To be considered

If you do not have a mixer, you can also do it in this order so that there are no lumps:

Mix flour with baking powder in a bowl and reserve it. In another bowl whisk eggs and add sugar and milk. Pour the egg mixture in the bowl with flour and stir it until you have a homogeneous batter.

You can add more than 1kg of apples if you want it with more fruit.
